The ad this week proved to be a bit challenging to come up with a full week's menu at a reasonable cost, but the task has been completed. Wishing you all a love-filled Valentine's!
Here are the suppers for the week of 2/14. They are all based off of Publix's weekly ad deals in hopes of saving you money. They are time-saving, simple meals that will get the job done. Please make sure to visit the "Grocery List" page, as you can print the page and take it with you to the grocery store. I have put everything on that list that you should need to make your suppers.
Monday (This is a great one if you are staying in for a romantic night)
Shrimp Linguini and Salad
Cook linguini until al dente according to package directions. While linguine is cooking, melt 6 Tbsp butter or margarine in a large skillet. Add 1 Tbsp minced garlic, and saute briefly to release flavor. Add 1 cup heavy cream; heat just to boiling, stirring frequently. Lower heat, and stir in 1 ½ lbs shrimp, and 3 Tbsp chopped basil. Continue cooking until shrimp are just heated through. Do not overcook shrimp! Remove sauce from heat. Drain the pasta, and toss lightly with the sauce. Toss again with ¾ c parmesan cheese, and salt and pepper to taste. Serve immediately with the Publix Salad mix.
Tuesday
Chili Baked Potatoes (Crockpot) with Broccoli
Wash the potatoes and dry them. Rub each potato with vegetable oil and kosher salt. Then wrap each potato individually in aluminum foil. Place all of the wrapped potatoes in the crock pot without any liquid. Cover and cook on low for 6-8hrs. Before serving, warm chili in a small saucepan over medium-low heat. Cut each potato in the middle (length wise) and open. Dress each potato with chili, cheese, onions, etc.
Wednesday
Taco Bar
Brown the meat in a medium pan. Drain. Warm taco shells according to package. Set-up a taco bar with chopped tomatoes, onions, cheese, cabbage slaw, and sour cream. Dress your tacos to your liking.
Thursday
Chicken Melts and Corn on the Cobb
** (we will use the other can for tomorrow night’s supper)
Open and drain one can of Swanson’s canned chicken. Mix in 2 -3 Tbs of mayonnaise. Add a handful of Craisins and a handful of chopped celery. Stir. Spread chicken on ½ of Nature’s Own Sandwich Rounds. Top with a slice of Swiss cheese and place in toaster oven or conventional oven at 350ยบ just long enough for the cheese to melt. Add a slice of tomato. Finish the sandwich with the top of the sandwich round. Prepare the Birds Eye corn on the cobb according to the package.
Friday
Chicken Tortilla Soup (Crock pot)
Drain the Chicken, corn, and diced tomatoes. Dump into crock pot. Add the remaining ingredients into the crock pot and cook over low heat until ready to eat. (This will be fine simmering for hours).
